Coconut-Lime Chicken Soup

Hi everyone! We tried this recipe a few months ago and loved it. We've told a few people about it, so we thought we would post it on here to share. It's so easy and very tasty. None of the flavors are overpowering, so don't be scared by all of the coconut milk. It's a nice, spicier twist on traditional chicken noodle soup.

Ingredients:

1 deli roasted chicken
1 can unsweetened coconut milk (15 oz.)
2 cups water
1/4 cup lime juice (2 medium limes)
3 medium carrots, thinly sliced (about 1.5 cups)
1 Tbsp. soy sauce
2 tsp. Thai seasoning blend
1/4 tsp. salt
Fresh cilantro

1. Remove skin and bones from chicken; shred chicken.
2. In large saucepan, combine shredded chicken with coconut milk, water, lime juice, sliced carrots, soy sauce, Thai seasoning, and salt.
3. Bring to boil, reduce heat and simmer covered for about 8 minutes.
4. Top with cilantro and serve. Enjoy!

Jon Stewart's Take on Sarah Palin's "Resignation"

Some wise words from last night's show:

Our personal favorite quote:

"Finally, we have a candidate for the people who loved George Bush's certainty, but were bothered by his rationality and executive experience."

Celebrating the 4th in Kansas City

Last weekend, our little family packed up and headed to Kansas City for a long holiday weekend. We spent Thursday night relaxing and trying to get used to the polyurethane smell throughout the house...the wood floors at the Boggess house were being resurfaced, which accounted for the smell and our "camp out" in the basement over the weekend! Eh, nothing a few Patron Margaritas couldn't cure :)

Unfortunately, Friday was a rainy day, so we weren't able to get any pool time in. Thankfully though, the weather cleared up in time for our evening at the Royals game with Bob, Nikki, and the Snyders, Mark and Terra. Despite the Royals' terrible performance, we had a blast at the new stadium!
After a bit of tailgating in our "varsity" parking lot, we headed up to our sweet suite seats - thanks Dad! High five (the strangest, funniest video ever...right, Nikki?)!
We enjoyed the food and drinks (and especially the dessert bar...with ice cream helmets!!!), along with fireworks to finish the night off. We feel so lucky to have such wonderful family and friends - the night was so much fun!

On Saturday, we spent most of the day relaxing at home and went out to dinner at Olive Garden (which was our second choice as our top choice, Margarita's, didn't seem to be open). Brenda finally got home from her "business" trip to Florida on Saturday evening, and we all enjoyed the neighborhood fireworks together.

The sun finally decided to show up on Sunday, so we spent most of the day lounging by the pool.
Our little guy Pepper has become quite the fish - he must take after his mom :) He brushed up on his doggie paddling skills by swimming many laps, and then relaxed by floating on a raft in the pool with his dad and grandpa. We're such proud parents - ha!

Weekend with Friends in St. Louis

Last weekend, we got to hang out with some out-of-town friends who made the long trip to St. Louis. On Friday night, we shared a few drinks at "the new Sasha's" (which is amazingly similar to the "old" Sasha's!) with Marcus, Julia, Mitch, who was in town from Kansas City, and Jen, who was in town from Chicago. It was great to meet you, Jen! Any excuse to go to Sasha's, and we're there!

On Saturday, after an overdue spring cleaning of our apartment, we had some pre-dinner drinks with Marcus and Julia (again - yeah!), and Eric and Becca Oelrich, who made the trek down to STL from Minnesota. Thanks to Marcus for suggesting a new drink - sweet tea vodka and lemonade. It's an Arnold Palmer with a kick! Delicious!

After drinks (and a cheese tray), we went to dinner at a cool (and cheap...or, for a better term, "inexpensive") little Italian place called Sugos Spaghetteria. It was nice to finally have a chance to relax with the Oelriches outside of a wedding setting...the last two times we've seen them were for their wedding in April and our wedding in May! We finished the evening at Dressel's, where the guys debated the finer points of the law - i.e., nerdy stuff like service of process. Amazed that they were with such cool and intelligent men, the girls laughed it off and still managed to have a great time!

On Sunday, we all met up again for breakfast, this time at the Benton Park Cafe. For a little while, all 8 of us were squeezed around one table...yes, as friends, we're that close! We hustled down to Busch Stadium after breakfast, where we took in a rather disappointing Cardinals/Twins game. The Oelriches, along with the many other Twins fans in attendance, got their wish - an easy Twins victory!

All in all, a great weekend!
